  • 2-3 Large Stalks Celery (chopped)
  • Olive Oil (for sautéing)
  • 4 Cups Vegetable Stock
  • 2 Cups Water
  • 1/4 Tsp Coriander
  • Salt and Pepper to Taste
  • 4 Cups Cooked Pasta
  • 1/3 Cup Cilantro
  • 1/3 Cup Parsley
  • 1/3 Cup Basil
  • 3 Spring Onions
  • 1/4 Tsp Salt
  • 1/2 Tsp Black Pepper

Instructions

  1. Chop the onion, zucchini, and celery.
  2. In a large pot over medium heat, sauté the chopped vegetables in olive oil until onions are translucent (5-10 minutes).
  3. Add vegetable stock, water, coriander, salt, and pepper; stir to combine.
  4. In a food processor, blend cilantro, parsley, and basil until smooth; incorporate into the soup.
