Ingredients

  • 1 cup mayonnaise
  • 1/4 cup sweet pickle relish
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon yellow mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped celery
  • 1/4 cup chopped onion
  • Optional: 2-3 chopped hard-boiled eggs, paprika for garnish

Instructions

  1. Cook the elbow macaroni in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together the mayonnaise, sweet pickle relish, apple cider vinegar, yellow mustard, salt, and black pepper until smooth.
  3. Add the cooled macaroni to the dressing and toss to coat evenly. Fold in the chopped celery and onion.
  4. If desired, gently mix in hard-boiled eggs. Adjust seasoning to taste.
  5. Cover and refrigerate for at least one hour before serving. Sprinkle paprika on top before serving.
