  • 1 box strawberry cake mix
  • 1 cup guava nectar or juice
  • 3 large eggs
  • 1/2 cup melted coconut oil
  • 8 oz cream cheese
  • 2 1/2 cups guava nectar (for glaze)
  • 1/2 cup granulated sugar (for glaze)
  • 2 tbsp cornstarch
  • 1/4 cup water (for slurry)
  • 8 oz Cool Whip (thawed)
  • 1 cup sweetened coconut flakes (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine the strawberry cake mix, guava nectar, eggs, melted coconut oil, cream cheese, granulated sugar, and vanilla extract. Mix until smooth.
  3. Pour the batter into the prepared pan and bake for about 30 minutes or until a toothpick inserted comes out clean.
  4. For the glaze, heat 2 1/2 cups of guava nectar with granulated sugar in a saucepan. Mix cornstarch with water to create a slurry and add it to the simmering mixture until thickened.
  5. Once cooled, poke holes in the cake and pour some glaze over it. Spread thawed Cool Whip on top and garnish with coconut flakes.
