  • 500 g chicken breast, cut into bite-sized pieces
  • 1 cup broccoli florets
  • 1 cup green beans, trimmed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • Salt & pepper to taste
  • 1 cup cooked mixed rice (brown, wild, and white rice blend)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chicken pieces and cook until golden brown and fully cooked through, about 5-7 minutes. Remove from the pan and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil. Sauté minced garlic for about 30 seconds until fragrant.
  4. Add broccoli florets, green beans, red bell pepper, and yellow bell pepper. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  5. Return the cooked chicken to the pan with vegetables. Pour in soy sauce, honey (or maple syrup), sesame oil, salt, and pepper; stir well to combine.
  6. Cook for an additional 2 minutes until heated through before serving over warm mixed rice.
