  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips (for the cookie dough)
  • 1 cup chocolate chips (for the topping)
  • 1 tsp coconut oil (for the topping)

Instructions

  1. In a mixing bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix well until smooth. Stir in chocolate chips.
  2. Line a cutting board or plate with parchment paper and press the cookie dough mixture evenly to about 1/2 inch thick.
  3. In a microwave-safe bowl, melt chocolate chips with coconut oil in short intervals until smooth.
  4. Spread the melted chocolate over the cookie dough layer and sprinkle with flaky sea salt if desired.
  5. Chill in the freezer for about 10 minutes to set before cutting into bars.
