  • 4-5 medium organic russet potatoes, peeled + cubed
  • 1/2 red onion, chopped
  • 6 garlic cloves, minced
  • 1 cup kale (optional)
  • 4 cups organic vegetable stock/broth
  • 1 Tbsp Extra virgin olive oil
  • 1 Tbsp unsalted butter
  • 2 Tbsps white cooking apple vinegar (or additional veggie stock)
  • 2 tsps On Everything All-Purpose Blend
  • 1 tsp smoked paprika
  • 1 cup organic heavy cream (or coconut milk/cashew cream for vegan)
  • 1-2 cups freshly-grated sharp cheddar cheese

Instructions

  1. Prepare your ingredients by peeling and cubing the potatoes, chopping the onion, and mincing the garlic.
  2. In a slow cooker, heat olive oil and butter over medium heat. Sauté onion and garlic until translucent.
  3. Add cubed potatoes along with vegetable stock, vinegar, smoked paprika, and seasoning blend; stir to combine.
  4. Cover and cook on low heat for about 35 minutes until potatoes are tender.
  5. Stir in heavy cream and grated cheddar until melted. If using kale, add it now.
  6. Serve hot in bowls with optional garnishes like fresh herbs or extra cheese.
