  • 1 large yellow onion, chopped
  • 10 ounces mushrooms, sliced
  • 5 cloves garlic, minced
  • 2 medium carrots, sliced
  • 1 ½ pounds yellow potatoes, cubed
  • 1 (14.5 oz) can crushed tomatoes
  • 3 ½ cups vegetable broth
  • 1 (15 oz) can chickpeas, rinsed and drained
  • Italian herb blend, salt, and black pepper

Instructions

  1. Preheat a large soup pot over medium heat. Add oil or vegetable broth.
  2. Sauté onion and mushrooms for about 8 minutes until mushrooms release moisture.
  3. Stir in garlic, carrots, and herbs; cook for an additional 2-3 minutes.
  4. Add crushed tomatoes, potatoes, vegetable broth, bay leaf, soy sauce, salt, and pepper; bring to a simmer.
  5. Cover the pot; reduce heat to low and simmer for about 20 minutes until potatoes are fork-tender.
  6. Stir in chickpeas; cook uncovered for another few minutes until slightly reduced. Remove bay leaf before serving.
