  • 4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon instant yeast
  • 1 cup cold whole milk (or almond milk)
  • 1 cup unsalted butter
  • 6 oz chocolate batons (or high-quality chocolate chips)
  • 1 large egg
  • 1 tablespoon milk (or cream)
  • 1 cup confectioners' sugar

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Gradually add cold milk while stirring until a dough forms. Knead on a floured surface for about 5–7 minutes until smooth. Shape into a ball, cover, and chill for at least 2 hours.
  2. Roll out chilled dough into a rectangle. Soften butter and mix with flour; spread over two-thirds of the dough. Fold the unbuttered third over the middle section and then fold down the remaining third like a letter. Wrap tightly and chill again for an hour.
  3. Roll out the dough into another rectangle and cut into triangles about 5 inches wide at the base. Place chocolate batons at the base of each triangle before rolling tightly toward the tip.
  4. Preheat oven to 400°F (200°C). Arrange rolled croissants on parchment-lined baking sheets. Mix egg and milk; brush over croissants before baking.
  5. Bake for 15–20 minutes until golden brown. Let cool slightly, then dust with confectioners' sugar before serving.
