  • 4 cups (500g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon (10g) salt
  • 1 tablespoon (10g) active dry yeast
  • 1 1/4 cups (300ml) warm milk
  • 2 tablespoons unsalted butter, melted
  • 1 cup (225g) unsalted butter, cold

Instructions

  1. In a bowl or stand mixer, combine flour, sugar, and salt. Dissolve yeast in warm milk and let foam for 5–10 minutes. Add to dry mixture with melted butter and knead until smooth. Shape into a rectangle, wrap in plastic, and refrigerate for 1 hour.
  2. Shape cold butter into a flat square between parchment papers.
  3. Roll chilled dough into a square, enclose the butter, roll out into a rectangle, fold like a letter, and chill—repeat two more times.
  4. Roll out final dough to 1/4-inch thickness; cut triangles. Roll from wide end to tip.
  5. Let rise at room temperature for 1.5 to 2 hours before baking at 400°F (200°C) for 18–22 minutes until golden.
