  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil (divided)
  • 1 jar raspberry preserves (or other jams)
  • 2 cups confectioners’ sugar
  • Whole milk (as needed for glaze)

Instructions

  1. In a bowl, mix warm water and sugar; sprinkle yeast and let sit until frothy.
  2. In a mixing bowl or stand mixer, combine flours and salt; add yeast mixture and 4 tbsp olive oil. Mix until sticky.
  3. Knead dough until smooth (5-7 minutes with mixer or 10 minutes by hand).
  4. Place in oiled bowl, cover, and let rise in a warm area until doubled (about 1 hour).
  5. Preheat oven to 375°F. Punch down the dough and stretch onto a parchment-lined baking sheet.
  6. Create dimples in the dough; fill each with raspberry preserves.
  7. Let rise again for about 30 minutes, then bake for approximately 22 minutes until golden brown.
  8. Combine confectioners’ sugar with milk to make glaze; drizzle over warm focaccia before slicing.
