  • 2 tsp. sea salt, divided
  • 1 tsp. fresh cracked pepper, divided
  • 1 tsp. oregano, divided
  • 1 tsp. garlic powder
  • 1/2 tsp. paprika, divided
  • 8 oz. turkey strips
  • 6 chicken thighs
  • 2 Tbsp. extra virgin olive oil
  • 1 large shallot
  • 3 cloves garlic, grated or pressed
  • 1 cup chicken broth
  • 1 stick of butter
  • 1/2 cup honey
  • 4 sprigs fresh thyme
  • 2 large peaches, sliced
  • Fresh basil and additional fresh thyme for topping

Instructions

  1. Preheat your oven to 350°F and season chicken thighs with half the salt, pepper, oregano, paprika, and garlic powder.
  2. In a skillet over medium heat, cook turkey strips for about 3 minutes until slightly dark red; set aside.
  3. In the same skillet, add olive oil and sear chicken thighs for 1-2 minutes per side until golden brown. Remove and set aside.
  4. Sauté chopped shallots in the skillet for 2 minutes; add grated garlic and cook for another 2 minutes.
  5. Deglaze the pan with chicken broth for about 3 minutes.
  6. Stir in butter and honey until melted; return chicken to the skillet with thyme sprigs.
  7. Bake covered for 15 minutes; top with peaches and broil for an additional 3-5 minutes.
  8. Garnish as desired and serve immediately.
