  • 1/3 cup lime juice (about 3 limes)
  • 1 shallot, sliced thin
  • 2 Thai chiles, stemmed, seeded, and minced
  • 1 garlic clove, minced
  • 1/2 teaspoon table salt
  • 1-2 tablespoons sugar (optional)
  • 1 tablespoon soy sauce (as a substitute for fish sauce)
  • 5 tablespoons chopped fresh cilantro, divided
  • 5 tablespoons chopped fresh mint, divided
  • 5 tablespoons salted dry-roasted peanuts, chopped fine, divided

Instructions

  1. Prepare the dressing by mixing lime juice and thinly sliced shallot in a large bowl. In a mortar and pestle, create a paste from minced Thai chiles, garlic, and salt. Combine this paste with the lime mixture along with sugar (if using) and soy sauce. Stir well.
  2. Add honeydew chunks, ¼ cup each of cilantro, mint, and peanuts to the dressing. Gently toss everything together.
  3. Transfer to a serving dish and garnish with remaining cilantro, mint, and peanuts. Serve immediately.
