  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash the overripe bananas until you have 2 1/4 cups.
  2. In a large bowl, mix flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream together butter with white and brown sugars. Add cinnamon, eggs, vanilla extract, and mashed bananas; mix well.
  4. Combine the banana mixture with the dry ingredients gently to avoid overmixing.
  5. Pour the batter into a greased pan.
  6. Set up your Instant Pot with a trivet and add 1 cup of water.
  7. Cover the pan tightly with foil and place it in the Instant Pot.
  8. Seal the lid and cook on manual for 50 minutes followed by a quick release.
  9. Remove the pan carefully using foil handles and let cool before slicing.
