  • 1 cup Onion, diced
  • 1 tablespoon minced garlic
  • 1-2 Jalapeno Peppers, diced
  • 1 teaspoon Chipotle Chili Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Black pepper
  • 2 cups Red Salsa
  • 1 (10-ounce) can Enchilada Sauce
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 2 boxes Jiffy cornbread Mix
  • 2 Eggs
  • 2/3 cup Milk
  • Sour Cream, for garnish
  • Chopped Tomatoes or pico de gallo, for garnish
  • Cilantro, for garnish
  • Guacamole, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, brown 1 pound of ground beef; drain excess fat.
  3. Add 1 cup diced onion, 1 tablespoon minced garlic, and 1-2 diced jalapeños. Sauté until tender (3-4 minutes).
  4. Stir in 1 teaspoon chipotle chili powder, 1 teaspoon paprika, 1 teaspoon salt, 1/2 teaspoon cumin, and 1/2 teaspoon black pepper.
  5. Pour in 2 cups red salsa and 1 (10-ounce) can enchilada sauce; simmer for 5 minutes.
  6. Mix in 1 (15-ounce) can rinsed black beans and 1 (15-ounce) can drained corn; transfer to a baking dish.
  7. In a bowl, combine two boxes Jiffy cornbread mix with 2 eggs and 2/3 cup milk; stir until smooth.
  8. Spread cornbread batter over the filling; bake for about 25–30 minutes until golden brown.
  9. Let cool slightly before garnishing with sour cream, chopped tomatoes or pico de gallo, cilantro, and guacamole.
