Italian Chicken Gnocchi Soup is a hearty and comforting dish featuring tender chicken, soft gnocchi, spinach, and sun-dried tomatoes in a creamy, savory broth. Infused with classic Italian flavors, this soup is perfect for a cozy lunch or dinner that warms the soul.

Ingredients

For the Broth
8 oz jar oil-packed sun-dried tomatoes, chopped (reserve 2 tablespoons of oil)
1 large onion, diced
3 large carrots, diced
2 stalks celery, diced
5 cloves garlic, minced
1 teaspoon Italian seasoning
½ teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon kosher salt
½ teaspoon black pepper
2 tablespoons tomato paste
1 tablespoon chicken base

For the Soup Base
2½ tablespoons all-purpose flour
5 cups chicken broth
1 (12 oz) can evaporated milk

For the Gnocchi
2 cups cooked chicken, shredded or chopped
3–4 oz baby spinach
1 pound shelf-stable gnocchi

For Serving
Grated Parmesan cheese

Instructions

  • In a large pot, heat the reserved sun-dried tomato oil over medium heat. Add the diced onion, carrots, celery, and garlic. Sauté for 5–7 minutes until the vegetables are softened and fragrant.
  • Stir in the Italian seasoning, smoked paprika, onion powder, salt, pepper, tomato paste, and chicken base. Cook for 1–2 minutes to bloom the flavors.
  • Sprinkle the flour over the vegetables and stir to combine, cooking for 1 minute.
  • Gradually whisk in the chicken broth and bring to a simmer. Stir in the evaporated milk and simmer for 10 minutes until the soup thickens slightly.
  • Add the shredded chicken, gnocchi, chopped sun-dried tomatoes, and baby spinach. Simmer for another 5–7 minutes until the gnocchi is cooked through and the spinach is wilted.
  • Serve hot, garnished with grated Parmesan cheese.
