  • 16 ounces beef (cut into strips)
  • 2 large eggs (beaten)
  • 1 large carrot (julienned)
  • 1 medium yellow onion (sliced)
  • 3 mushrooms (sliced)
  • 2 cups baby spinach
  • 7 tablespoons soy sauce
  • 2 tablespoons toasted sesame oil
  • Honey or brown sugar

Instructions

  1. Mix all sauce ingredients in a bowl and set aside.
  2. Boil sweet potato noodles in a large pot until cooked through (10-15 minutes), then rinse under cold water.
  3. Prepare an egg crepe by cooking beaten eggs in a nonstick pan, then slice into strips once cooled.
  4. Cook beef in the same pan until browned, then sauté vegetables starting with the carrots.
  5. Combine cooked noodles with the sauce in the pan, add the beef, vegetables, and egg strips.
  6. Serve hot, garnished with sesame seeds if desired.
