Ingredients

For the Chicken
6 chicken quarters

For the Marinade
Kalbi marinade (store-bought or homemade)
½ apple, grated or blended
¼ cup soy sauce
¼ cup mirin
2-inch piece fresh ginger, grated
4 cloves garlic, minced
2 stalks green onion, chopped
2 tablespoons sesame oil
2 tablespoons rice vinegar
2 tablespoons sweetener (sugar, honey, or preferred alternative)
1 teaspoon ground black pepper

Instructions

  • In a blender or food processor, combine the apple, soy sauce, mirin, grated ginger, garlic, green onion, sesame oil, rice vinegar, sweetener, and black pepper to create the marinade.
  • Place the chicken quarters in a large bowl or resealable bag and pour the marinade over them. Toss to coat evenly. Cover and refrigerate for at least 1 hour, preferably 4–6 hours, for deeper flavor.
  • Preheat the air fryer to 380°F (193°C).
  • Arrange the marinated chicken legs in the air fryer basket in a single layer. Cook for 25–30 minutes, flipping halfway through, until the chicken is fully cooked (internal temperature 165°F / 74°C) and caramelized.
  • Optional: Sprinkle sesame seeds over the chicken before serving.
  • Serve hot with steamed rice, vegetables, or your favorite side.
