  • 200 grams (7 oz) ground beef
  • 400 grams (14 oz) lean ground beef
  • 1 large egg
  • 100 grams (3.5 oz) crustless bread
  • 125 ml (½ cup) white grape juice
  • 100 grams (½ cup) minced onion
  • 4 minced garlic cloves
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 teaspoons dried parsley
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups (500 ml) hot water or stock
  • 8-10 tablespoons lemon juice

Instructions

  1. In a mixing bowl, combine both ground beefs, egg, bread crumbs, grape juice, onion, garlic, cumin, oregano, parsley, salt, and pepper. Mix until well combined.
  2. With wet hands, shape the mixture into small balls (about 1 inch in diameter) and place on a baking sheet.
  3. Heat olive oil in a skillet over medium heat. Cook meatballs in batches until browned on all sides (5-7 minutes per batch).
  4. For the sauce: Melt butter in another pan over medium heat. Whisk in flour until smooth; gradually add hot water or stock until thickened. Stir in lemon juice and season to taste.
  5. Add cooked meatballs to the sauce and simmer for 5 minutes before serving.
