  • 1/2 cup shredded coconut, toasted
  • 2 teaspoons lime zest

Instructions

  1. Preheat oven to 350°F (175°C) and grease a donut pan.
  2. In one bowl, whisk together flour, baking powder, salt, and sugar. In another bowl, mix lime zest, melted coconut oil, beaten egg, and coconut milk until smooth.
  3. Combine wet and dry mixtures gently; fill donut pan halfway with batter.
  4. Bake for 10 minutes or until a toothpick comes out clean. Cool for 5 minutes before transferring to a rack.
  5. Whisk confectioners' sugar with key lime juice and zest for glaze; dip cooled donuts and sprinkle with toasted coconut.
