  • 1 tbsp (8.5 g) yeast
  • 2 cups (500 ml) warm milk
  • 4 large eggs
  • 1 tbsp (8.5 g) sugar
  • 1 tbsp (8.5 g) salt
  • 1 1/3 cup (315 ml) oil
  • 8 cups (1 kg) flour + a little more for rolling dough out
  • 2 cups (250 g) feta cheese
  • Salt, to taste
  • Sesame seeds
  • 3 egg yolks, beaten slightly
  • 2 eggs

Instructions

  1. Proof the yeast by mixing it with warm milk and sugar; let it sit until foamy.
  2. In a large bowl, beat eggs and whisk in oil. Combine with the proofed yeast mixture and salt.
  3. Gradually add flour until a soft dough forms; knead until smooth.
  4. Let the dough rise in a warm place for about 30 minutes or until doubled in size.
  5. Roll out the dough into circles, cut into triangles, fill with feta, and roll into crescent shapes.
  6. Place on a baking sheet, let rise again for 20-30 minutes, then brush with egg yolk and sprinkle sesame seeds before baking at 350°F (175°C) until golden brown.
