  • 3-4 lbs chuck roast
  • ½ cup soy sauce
  • 2 tbsp gochujang
  • 3 tbsp sesame oil
  • 3 cloves garlic (minced)
  • 2 tbsp honey or brown sugar
  • 3 carrots (cut into chunks)
  • 2 potatoes (quartered)
  • 1 onion (sliced)
  • Sliced green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Preheat a Dutch oven over medium-high heat. Season chuck roast with salt and pepper, then sear in sesame oil until browned on all sides (about 5-7 minutes).
  2. In a bowl, mix soy sauce, gochujang, garlic, ginger, honey or brown sugar, grated pear or apple, and rice vinegar.
  3. Remove the roast temporarily and layer carrots, potatoes, onion, and optional radish in the pot. Place the roast back on top and pour the marinade over.
  4. Cover and reduce heat to low. Cook for approximately 4 hours until the beef is tender.
  5. Let it rest for a few minutes before slicing. Garnish with green onions and sesame seeds before serving.
