  • 4 to 5 lbs beef chuck roast
  • 1 tbsp kosher salt
  • 1 tbsp vegetable oil
  • 1 sweet onion
  • 6 garlic cloves
  • 1 tbsp fresh ginger
  • 2 tbsp gochujang
  • ¼ cup brown sugar
  • ½ cup soy sauce (or coconut aminos)
  • 2 cups beef broth

Instructions

  1. Season the beef chuck roast with kosher salt.
  2. In a Dutch oven, heat vegetable oil over medium-high heat and sear the beef on all sides until browned (about 3-4 minutes per side). Remove from pot and set aside.
  3. In the same pot, add sliced sweet onion and cook until softened (about 5 minutes). Add minced garlic and grated ginger; sauté until fragrant (about 1 minute).
  4. Stir in gochujang, brown sugar, soy sauce (or coconut aminos), and beef broth until well combined.
  5. Return the seared beef to the pot with the sauce, bring to a simmer, cover with a lid, and reduce heat to low. Cook for about 3 hours or until tender.
  6. Once done, shred or slice the beef as desired and serve hot over cooked rice garnished with fresh cilantro and accompanied by kimchi.
