  • 3 heads baby bok choy
  • 1 bunch green onions
  • 1 garlic clove
  • 1 (3-inch) piece ginger
  • 20 wonton wrappers
  • 2 Tablespoons soy sauce, plus more to taste
  • 1 1/2 teaspoons rice or white vinegar
  • 1 Tablespoon brown sugar
  • 1 teaspoon Kosher salt, divided
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons cornstarch

Instructions

  1. In a large saucepan over medium-high heat, combine chicken stock with chopped green onions (white parts), sliced garlic, and ginger. Add soy sauce, vinegar, brown sugar, and salt; bring to a boil.
  2. For the meatballs, mix ground beef with finely sliced green onions (green parts), ginger, soy sauce, sesame oil, and cornstarch in a bowl. Form into 1-inch balls.
  3. Reduce heat to simmer and add meatballs to the broth; cook for about 5 minutes. Stir in quartered wonton wrappers and chopped bok choy; continue cooking for another 8 minutes until veggies are tender.
