  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 cup sour cream or plain Greek yogurt
  • 2 large eggs (room temperature)
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1½ cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 loaf pan and line it with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, mix vegetable oil, sugar, sour cream (or yogurt), eggs, lemon juice, lemon zest, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  5. Toss blueberries with 1 tbsp flour to coat, then fold them into the batter.
  6. Transfer the mixture to the prepared loaf pan and smooth the top. Bake for 55–65 minutes until a toothpick comes out clean.
  7. Cool in the pan for about 15 minutes before glazing with a mixture of powdered sugar and lemon juice.
