  • 1/4 cup lemon juice

  • 3 tablespoons cornstarch
  • 1/2 cup milk
  • 3 large egg yolks
  • 1/4 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the choux pastry by boiling water and butter together, then mixing in flour and salt until a dough forms. Cool slightly, then incorporate eggs one at a time until smooth.
  2. Preheat the oven to 400°F (200°C) and pipe the choux pastry onto a baking sheet lined with parchment paper. Bake for 25-30 minutes until golden brown.
  3. For the lemon cream filling, whisk together milk, sugar, cornstarch, egg yolks, and lemon juice in a bowl. Cook on medium heat until thickened; stir in vanilla and let cool.
  4. Slice cooled eclairs lengthwise and fill with lemon cream. Top with fresh raspberries.
  5. Drizzle with powdered sugar mixed with lemon juice before serving.
