  • 4 cups water
  • 2.43 lbs white sugar

Instructions

  1. Thoroughly wash the lemons and use a vegetable peeler to remove only the yellow skin.
  2. Place the lemon peels in a large glass jar and cover with water. Seal and let infuse in a dark place for 25 days.
  3. After infusion, strain out the lemon peels using a fine mesh strainer.
  4. In a pot over medium heat, combine 4 cups of water with the sugar until dissolved, then remove from heat.
  5. Once cooled, mix the strained lemon-infused water with the sugar syrup.
  6. Bottle your limoncello and chill in the refrigerator for several hours before serving.
