  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cups panko breadcrumbs
  • 4 slices cooked chicken
  • 4-8 slices Swiss cheese
  • ½ cup mayonnaise
  • 3 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 3 tablespoons olive oil

Instructions

  1. Pound each chicken breast between plastic wrap until about ½ inch thick.
  2. Set up a breading station with flour mixed with salt and pepper in one dish, beaten eggs in another, and panko breadcrumbs mixed with optional garlic powder and paprika in a third.
  3. Coat each chicken breast first in flour, then dip into eggs, and finally press into the panko mixture until fully coated.
  4. Heat olive oil in a frying pan over medium heat; cook each breaded chicken breast until golden brown on both sides (about 4-5 minutes per side) or bake at 375°F (190°C) until cooked through.

  6. For the sauce, mix mayonnaise, Dijon mustard, honey, lemon juice, salt, pepper, and milk/cream until smooth.
