  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • ¼ cup mango purée
  • ¼ cup strawberry jam
  • For Frosting: 1 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 2 tbsp heavy cream (or milk)
  • 1 tsp vanilla extract
  • 2 tbsp mango purée
  • 2 tbsp strawberry purée

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream softened butter and sugar until fluffy in another bowl.
  4. Beat in eggs one at a time, followed by vanilla extract, milk, and mango purée.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Fill cupcake liners about three-quarters full and bake for 18–20 minutes until golden brown.
  7. Cool completely before filling centers with strawberry jam.
  8. For frosting, beat softened butter until creamy, then gradually mix in powdered sugar and heavy cream until smooth.
  9. Divide frosting into three bowls; color one with mango purée and another with strawberry purée.
  10. Pipe frosting onto cupcakes using the sunset swirl technique.
