  • 1 1/4 cups mashed bananas (3-4 bananas)

  • 1/4 cup plain yogurt or sour cream
  • 3/4 cup walnuts or pecans, roughly chopped
  • 1/3 cup maple syrup for topping

Instructions

  1. Preheat oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, sift together flour, baking soda, and salt; set aside.
  3. Beat softened butter and brown sugar until fluffy, then mix in maple syrup.
  4. Add eggs one at a time, followed by mashed bananas and vanilla extract.
