  • 1½ teaspoons pumpkin pie spice
  • ¼ cup finely chopped pecans or walnuts
  • 3 tablespoons brown sugar (packed)
  • ¼ cup all-purpose flour
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter (melted)
  • 1¼ teaspoons maple extract
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, combine chopped pecans or walnuts, brown sugar, flour, cinnamon, salt, and melted butter for the topping. Set aside.
  3. In another bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
  4. In a larger bowl, beat eggs and sugar until fluffy; mix in canola oil, pumpkin puree, milk, and maple extract until well combined.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Pour batter into the prepared pan and sprinkle topping evenly.
