  • 1 head green cabbage (900-1100 g)
  • 3 tbsp olive oil
  • 2 tbsp butter
  • ½ cup finely diced red onion
  • 4 cloves garlic (minced)
  • 1 cup low-sodium chicken broth (or vegetable broth)
  • 4 oz cream cheese (softened)
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes (julienned)
  • 1 tsp dried oregano leaves
  • 1 tsp dried thyme leaves
  • ½ tsp dried rosemary leaves
  • 1 tsp table salt
  • ½ tsp black pepper
  • 1 tsp red pepper flakes (optional)
  • ½ cup grated Parmesan cheese for serving
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut cabbage into 8 wedges with the core intact.
  3. In a cast iron skillet over medium-high heat, sear cabbage wedges in olive oil until golden brown on both sides. Season with salt and pepper.
  4. Reduce heat to medium; add butter and sauté onion until softened. Add garlic for a minute.
  5. Deglaze pan with chicken broth, then add cream cheese and whisk until smooth.
  6. Stir in heavy cream, sun-dried tomatoes, herbs, salt, and pepper; simmer until slightly thickened.
  7. Mix in Parmesan cheese until melted.
  8. Nestle cabbage back into the skillet, spooning sauce over each piece.
  9. Cover and bake for 45 minutes; uncover and bake an additional 15-20 minutes until tender.
  10. Let rest for 5 minutes before serving.
