  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ½ cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and black pepper.
  2. Add chicken breasts to the marinade and coat thoroughly. Let marinate for at least 30 minutes.
  3. Heat a skillet over medium heat and cook the marinated chicken for 5–6 minutes on each side until golden brown and cooked through.
  4. Allow the chicken to rest for a few minutes before slicing it.
  5. Divide cooked rice or quinoa into serving bowls and top with sliced chicken, cherry tomatoes, cucumber, and crumbled feta.
  6. Drizzle with tzatziki sauce and garnish with fresh parsley before serving.
