- 1.5 lbs boneless, skinless chicken breasts
- 3 tbsp extra virgin olive oil
- 2 medium zucchini
- 2 red bell peppers
- 1 large red onion
- 2 cups cherry tomatoes
- 1 cup kalamata olives
- 4 cloves garlic
- 2 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- Juice of 1 lemon
- 0.5 cup feta cheese for garnish
- 2 tbsp fresh parsley (optional garnish)
- Prep all ingredients: chop chicken and vegetables.
- In a large skillet, heat 2 tbsp olive oil over medium-high heat. Season chicken with salt and pepper, then cook until golden brown (6–8 minutes).
- Add remaining olive oil; sauté onions and garlic until fragrant (about 2 minutes).
- Toss in zucchini, bell peppers, cherry tomatoes, olives, and herbs; cook until vegetables are tender (5–7 minutes).
- Return chicken to the pan; mix well.
- Finish with lemon juice and feta cheese before serving.
