Ingredients

Scale
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter (melted)
  • 3 packages cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup caramel sauce (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed. Press firmly into the bottom of a springform pan. Bake for about 10 minutes until slightly golden, then let cool.
  2. In another bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add granulated sugar, mixing well. Add eggs one at a time, mixing until fully incorporated, then stir in vanilla extract.
  3. Pour cheesecake filling over the cooled crust and bake for approximately 45 minutes until set but slightly jiggly in the center. Turn off the oven and crack the door open; let cool inside for about an hour.
  4. Once cooled completely at room temperature, refrigerate for at least 4 hours or overnight. Before serving, drizzle with caramel sauce.
