Mini Coconut Lime Bundt Cakes are a delightful tropical treat that perfectly balance the zesty flavor of lime with the rich sweetness of coconut.   • 1 (3 ounce) lime jello
  • 1 cup shredded coconut
  • 1 teaspoon coconut extract
  • 1 (16 ounce) key lime frosting tub
  • Zest of 2 limes

Instructions

  1. Preheat your oven to 350°F and spray mini bundt cake pan with non-stick cooking spray.
  2. Prepare the cake mixes according to package directions and divide into two bowls.
  3. Add shredded coconut and coconut extract to one bowl; mix well.
  4. Stir lime jello into the second bowl until fully combined.
  5. Fill each mini bundt cake well with layers of coconut batter followed by lime batter.
  6. Bake for about 22 minutes or until a toothpick inserted comes out clean.
  7. Allow cakes to cool before frosting with melted key lime frosting and garnishing with toasted coconut and lime zest.
