  • 150 g digestive biscuits
  • 60 g unsalted butter, melted
  • 250 g cream cheese, softened
  • 75 g icing sugar
  • 1 tsp vanilla extract
  • 150 ml double cream
  • 6 tsp raspberry or strawberry jam
  • 6 Jammie Dodger biscuits

Instructions

  1. Line a muffin tin with paper cupcake cases.
  2. Crush the digestive biscuits and mix with melted butter. Press into the lined cases and chill for 10 minutes.
  3. In a bowl, beat together the cream cheese, icing sugar, and vanilla extract until smooth.
  4. Whip the double cream to soft peaks in a separate bowl.
  5. Gently fold the whipped cream into the cream cheese mixture until combined.
  6. Spoon the cheesecake mixture over each biscuit base and chill for at least 3 hours until set.
  7. Before serving, top each cheesecake with jam and place a Jammie Dodger on top.
