  • ½ cup (115g) granulated sugar
  • ½ cup (60g) powdered sugar
  • ½ cup (108g) canola or vegetable oil
  • 1¼ teaspoons pure vanilla extract
  • ¼ teaspoon almond extract
  • 1 large egg
  • 2⅓ cups (291g) all-purpose flour, spooned and leveled
  • ¾ teaspoon baking soda
  • ¾ teaspoon cream of tartar
  • ½ teaspoon salt
  • ¾ cup (173g) granulated sugar, divided (for rolling and sprinkling)

Instructions

  1. Preheat your oven to 350°F. Line three baking sheets with parchment paper.
  2. In a large mixing bowl, cream together softened unsalted butter, granulated sugar, and powdered sugar using an electric mixer until creamy.
  3. Add canola or vegetable oil and mix well. Then incorporate the egg along with both vanilla and almond extracts.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, cream of tartar, and salt. Gradually blend this mixture into the wet ingredients until combined.
  5. Scoop out dough into approximately 2-teaspoon portions and roll them in granulated sugar before placing them on prepared baking sheets about two inches apart.
  6. Flatten each dough ball gently before baking for 9–12 minutes until edges start to set. Sprinkle tops with reserved sugar immediately after removing from the oven and let cool on wire racks.
