  • 1.5 lbs Japanese sweet potatoes, peeled
  • 1 tbsp avocado oil or other heat-tolerant oil
  • 2 tbsp white miso paste
  • 1 tbsp maple syrup
  • 1/2 cup water
  • 2 tbsp butter (regular or non-dairy)
  • Flaky sea salt for serving

Instructions

  1. Preheat your oven to 400°F.
  2. Slice the sweet potatoes into 1-inch thick rounds for even cooking.
  3. In a bowl, whisk together the white miso paste and maple syrup. Gradually add water until smooth; set aside.
  4. Heat a heavy skillet over medium-high heat and add avocado oil. Sear the sweet potato rounds for 3-4 minutes on one side until browned, then flip and sear for another 1-2 minutes.
  5. Remove from heat, add butter, and pour over the miso mixture while lifting the potatoes slightly.
  6. Transfer the skillet to the oven and bake for 15 minutes. Baste with sauce halfway through and bake for an additional 5-10 minutes until tender.
  7. Serve warm, drizzled with any remaining sauce and sprinkled with flaky sea salt.
