Each mochi is filled with either sweet red bean paste or creamy vanilla filling, creating a burst of flavor wrapped in a soft, stretchy exterior.

  • 1 cup glutinous rice flour (mochiko)
  • ¼ cup granulated sugar
  • ¾ cup water
  • 8 small-to-medium fresh strawberries (hulled and dry)
  • 1 cup sweet red bean paste or whipped vanilla cream
  • ½ cup potato starch (for dusting)
  • Pinch of salt

Instructions

  1. Prep strawberries by washing, hulling, and drying them thoroughly.
  2. Wrap each strawberry in sweet red bean paste or whipped vanilla cream. Chill to firm up.
  3. Mix mochiko, sugar, salt, and water until smooth. Cook in the microwave for 2½–3½ minutes or steam until glossy.
  4. Cool the dough slightly, then divide into 8 equal pieces and flatten into circles.
  5. Place each strawberry on a circle of dough, fold over, seal, and smooth out seams.
  6. Let mochi rest for about 10 minutes before brushing off excess starch.
