  • 1 1/2 cups warm water (about 110°F)

  • 1/2 cup grated Parmesan cheese
  • 8 ounces mozzarella cheese (cut into cubes)
  • Coarse sea salt for sprinkling

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar; let sit until foamy (about 5 minutes).
  2. In another bowl, whisk together flour and salt. Gradually add to the yeast mixture until combined.
  3. Knead the dough with a stand mixer or by hand until smooth (about 5 or 8 minutes).
  4. Mix in chopped rosemary and grated Parmesan; form into a ball and let rise in a greased bowl for about an hour.
  5. Preheat oven to 425°F and line a baking sheet with parchment paper.
  6. Punch down the dough, divide into eight pieces, and flatten each piece around a cube of mozzarella to seal.
  7. Shape into pretzel forms on the prepared baking sheet.
  8. Boil water with baking soda; submerge each pretzel for about 30 seconds, then drain.
  9. Brush pretzels with melted butter and sprinkle with coarse sea salt before baking for about 12–15 minutes or until golden brown.
