  • 4 cups sugar
  • 4 cups water

Instructions

  1. Thoroughly wash the strawberry tops under cold running water.
  2. Cut off the tops and set them aside; use the remaining strawberries in other recipes.
  3. In a small pot, combine the strawberry tops and water.
  4. Add sugar to maintain a 1:1 ratio with the infused water.
  5. Bring to a boil, then simmer for 10-15 minutes until the color deepens.
  6. Strain out the solids and press to extract maximum liquid.
  7. Return the juice to the pot and simmer until reduced by about 1/4.
  8. Let cool before pouring into a jar for storage.
