  • 200g dairy-free block butter (cold and cubed)
  • 100g caster sugar
  • 300g all-purpose flour
  • 2 teaspoons pumpkin spice
  • 1 jar vegan Nutella

Instructions

  1. In a mixing bowl, cream together cold dairy-free butter and 100g caster sugar until smooth.
  2. Gradually add all-purpose flour and pumpkin spice to form a soft dough.
  3. Chill the dough for 15 minutes in the refrigerator.
  4. Preheat your oven to 180°C (350°F). Roll out the dough to about 5mm thick on a floured surface and cut into pumpkin shapes using cookie cutters.
  5. Place cut-out cookies onto a lined baking tray and bake for 10-12 minutes until lightly golden around the edges.
  6. Allow cookies to cool briefly before spreading vegan Nutella on half of them and topping with another cookie.
