  • 4 tablespoons cornstarch
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 cloves minced garlic
  • 4 cups beef broth
  • 1 ½ pounds red potatoes (cut into chunks)
  • 10 ounces pearl onions
  • 4 medium carrots (sliced)
  • 4 medium celery ribs (sliced)
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground allspice

Instructions

  1. Dust beef stew meat with cornstarch and season with salt.
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the beef until browned on all sides.
  3. Add minced garlic and tomato paste; cook until fragrant.
  4. Pour in beef broth and deglaze the pot, scraping any browned bits.
  5. Stir in potatoes, pearl onions, carrots, celery, and seasonings.
  6. Bring to a boil; then reduce heat to low. Cover and simmer for 90 to 120 minutes until the beef is tender.
  7. Mix remaining cornstarch with cold water; stir into the stew to thicken.
