  • 12 Tbsp. unsalted butter
  • 1 1/4 cups chocolate chips, divided
  • 3/4 cup cocoa powder
  • 1/2 tsp. salt
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 3 large eggs
  • 2 Tbsp. vegetable oil
  • 1 tsp. peppermint extract
  • 3/4 cup all-purpose flour
  • 1 1/2 tsp. espresso powder (optional)
  • Peppermint Candies/Candy Canes, crushed for garnish
  • 1 cup chocolate chips for ganache
  • 1/2 cup heavy cream for ganache
  • 1 tsp. peppermint extract for ganache
  • 1 tsp. unsalted butter for ganache
  • pinch of salt for ganache

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and line an 8×8 inch baking pan with parchment paper.
  3. In a large microwave-safe bowl, melt the butter and ½ cup of the chocolate chips together in 30-second increments until smooth.
  4. Stir in cocoa powder, salt, espresso powder (if using), sugars, eggs, vegetable oil, and peppermint extract until well combined.
  5. Gently fold in flour and remaining chocolate chips until just combined.
  6. Pour the batter into the prepared pan and bake for 35–40 minutes or until a toothpick inserted comes out mostly clean.
  7. Allow brownies to cool completely before preparing the ganache.
  8. For the ganache, heat heavy cream until warm, pour over remaining chocolate chips, let sit for a few minutes, then whisk until smooth. Add peppermint extract and unsalted butter.
  9. Spread ganache over cooled brownies and garnish with crushed peppermint candies.
  10. Refrigerate for at least an hour to set before cutting into squares.
