This one pot creamy Cajun Beef sausage pasta is bold, smoky, and perfectly spiced with tender pasta simmered directly in a rich, creamy sauce. With colorful bell peppers, savory Beef sausage, and plenty of Parmesan, it’s an easy comfort-food dinner made in just one pan.

Ingredients

For the Beef Sausage and Pasta
10 ounces smoked Beef sausage (Andouille or kielbasa), sliced
4 ounces pasta (penne or rigatoni)

For the Vegetables
1 cup diced bell peppers (mixed colors)
1/2 cup diced onion
1 cup fresh spinach (optional)

For the Sauce
2 tablespoons Cajun seasoning
1 tablespoon olive oil
2 cups low-sodium chicken broth (plus more if needed)
1 cup heavy cream
1 cup shredded Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)

For Garnish
Chopped parsley

Instructions

  • Heat olive oil in a large deep skillet or Dutch oven over medium heat.
  • Add the sliced Beef sausage and cook for 4–5 minutes until browned and slightly crisp around the edges.
  • Stir in the diced onion and bell peppers. Cook for 3–4 minutes until softened.
  • Add the garlic powder, Cajun seasoning, and cayenne pepper (if using). Stir for about 30 seconds to release the flavors.
  • Pour in the chicken broth and heavy cream. Stir well, then add the uncooked pasta directly into the pot.
  • Bring the mixture to a gentle boil, then reduce heat to medium-low. Cover and simmer for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed. Add more broth if needed.
  • Stir in the shredded Parmesan cheese until melted and the sauce becomes creamy and thick.
  • Fold in the fresh spinach (if using) and cook for 1–2 minutes until wilted.
  • Taste and adjust seasoning if necessary. Garnish with chopped parsley before serving.
