  • 12 oz mushrooms, diced
  • 4 celery ribs, diced
  • 4 cloves garlic, minced
  • 3 handfuls kale, chopped
  • 1/4 cup olive oil
  • 1 tsp paprika
  • 1 tbs Italian herb seasoning
  • Salt and pepper, to taste
  • 2 tbs tomato paste
  • 1/2 cup dry apple vinegar
  • 7 cups low sodium vegetable or chicken broth
  • lb cheese tortellini
  • 1/2 cup grated parmesan cheese
  • 1/2 cup heavy cream

Instructions

  1. Heat olive oil in a large pot over high heat. Add diced carrots and sweet onion; sauté until softened.
  2. Stir in diced mushrooms and celery, cooking for a few more minutes. Add minced garlic and sauté until fragrant.
  3. Sprinkle in paprika, Italian herb seasoning, salt, and pepper; mix in tomato paste and coat the vegetables.
  4. Pour in apple vinegar and broth, bringing the mixture to a boil before reducing heat to simmer for 20 minutes.
  5. Add cheese tortellini and grated parmesan; boil gently for 5 minutes until tortellini is cooked through.
  6. Finish by stirring in heavy cream and chopped kale.
