  • 5 tablespoons unsalted butter (melted)
  • 24 oz cream cheese (full-fat)
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup sour cream
  • 3 large eggs
  • 12-15 chopped Oreo cookies (for filling)
  • 4 oz semi-sweet chocolate (for ganache)
  • 1/2 cup whipping cream

Instructions

  1. Preheat oven to 325F (170C) and prepare a springform pan by wrapping it in aluminum foil and greasing it.
  2. Crush the Oreo cookies and mix them with melted butter, then press into the bottom of the springform pan to form the crust.
  3. In a mixing bowl, beat together cream cheese and sugar until smooth, then add cornstarch, sour cream, vanilla extract, and eggs one at a time until well combined. Gently fold in chopped Oreos.
  4. Pour the filling over the crust and bake in a water bath for about 55 minutes or until slightly jiggly in the center.
  5. For ganache, heat whipping cream until simmering, pour over chopped chocolate, let sit for 5 minutes before stirring until smooth.
  6. Cool cheesecake gradually in the oven with door ajar before refrigerating for at least four hours or overnight. Top with ganache and crushed Oreos before serving.
