  • 60 ml freshly squeezed lemon juice

  • 120 ml whole milk
  • 120 g powdered sugar for glaze
  • 2 tablespoons lemon juice for glaze

Instructions

  1. Preheat your oven to 175°C (350°F) and line a round cake pan with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until pale and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in lemon zest and juice until combined.
  5. Gradually mix in flour, baking powder, and salt until just combined.
  6. Pour in whole milk and mix until smooth.
  7. Transfer batter to the prepared pan and bake for 30–35 minutes or until a skewer comes out clean.
  8. For the glaze, whisk together powdered sugar and lemon juice until smooth.
  9. Cool the cake for about 10 minutes before drizzling with glaze.
