  • 1/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed ripe bananas (about 3 or 4 medium)
  • Optional: 1/2 to 2/3 cups chopped nuts (pecans, walnuts, hazelnuts, or peanuts)

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. 2. In a mixing bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt until well combined.
  3. 3. In another bowl, use an electric mixer to beat together softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix in vanilla extract.
  4. 4. Gradually incorporate the dry mixture into the wet mixture while alternating with sour cream until just combined.
  5. 5. Fold in the mashed bananas and optional nuts gently until evenly distributed.
  6. 6. Pour the batter into the prepared loaf pan and bake for about 50 to 55 minutes or until golden brown and a toothpick comes out clean.
  7. 7. Allow cooling in the pan for ten minutes before transferring to a wire rack to cool completely.
