  • 6 Persian cucumbers or 2 English cucumbers
  • 6 medium Roma tomatoes
  • 1 small red onion
  • 3 small Persian limes or 1 large lemon (about 5 tbsp of fresh lemon juice)
  • 2 tbsp dried mint
  • Salt and pepper to taste
  • 3 tbsp olive oil

Instructions

  1. Peel and finely chop the red onion.
  2. Cut off the ends of the cucumbers, slice them in half lengthwise, and chop into small pieces.
  3. Halve the Roma tomatoes, remove seeds, and dice into small cubes.
  4. In a bowl, squeeze juice from the limes or lemon, then mix in salt, pepper, and dried mint.
  5. In a large mixing bowl, combine chopped cucumbers, tomatoes, and red onion. Pour in the citrus dressing and mix well.
  6. Drizzle with olive oil just before serving and toss gently.
